Τhe variety of this fragrant smoked pepper is produced in the village of ancient Bachovo in Greece. The ripe peppers are harvested with care in mid-October and smoked for 10 days in wooden ovens according to a traditional recipe. Then ground in an old water mill which turns them into a unique pepper with excellent taste.
